Gluten free Casein free Chicken three different ways! Savory, Sweet and Spicy
Serve with Brown Rice and any kind of Beans

Sweet: Quick and easy Apricot mustard sauce
3 TBS olive oil
1/2 cup onions,  finely chopped
½ cup peppers, finely chopped
16 ounces of chicken breast (natural or organic free range without hormones)
Sauce:
¼ cup Dijon style GF mustard
3 Tablespoons apricot preserves
2/3 cup low sodium chicken broth

1. In a large skillet, sauté the onions, peppers and chicken in the olive oil for 5 minutes
2. Add preserves and chicken broth and stir. Bring to a simmer over medium high heat, then reduce heat to medium or medium low. Gently simmer for 10-12 minutes or until chicken is cooked through.
3. If the sauce becomes too thick while cooking, just add a few Tablespoons more of chicken broth.

Savory: Quick and Easy Chicken Dijon
1/2 cup hi maize natural fiber cornstarch (available in stores and on the internet)
1 teaspoon regular or smoked paprika
16 ozs chicken breasts
2 Tablespoons olive oil
1 cup low sodium chicken broth
2-3 Tablespoons Dijon style mustard
3 cloves garlic, minced, more if desired
2 green onions, finely chopped

1. In a paper or plastic bag, mix cornstarch and paprika. Drop chicken breasts one at a time into bag, shake and remove.
2. Put oil in oven proof baking dish and place in preheated 350 degree oven until oil is hot.
3. Add chicken pieces to dish and bake for 20 minutes.
4. In separate bowl, mix chicken broth, mustard and garlic.
5. After 20 minutes, turn chicken breasts and pour broth mixture over them. Sprinkle with half the green onions and bake another 10-20 minutes until done. Garnish with remaining green onions>

Spicy: Quick Chicken Tacos or Burritos
3 TBS olive oil
1/2 cup onions,  finely chopped
½ cup peppers, finely chopped
16 ounces of chicken breast tenders, cut in 1-2 inch strips (natural or organic free range without hormones)
1 ounce GF taco seasoning mix or more to taste (Trader Joe’s has a good one)
4 ounces tomato sauce or 2 Tablespoons tomato paste

1. Saute onions, peppers and chicken until soft and chicken is almost done, 5-8 minutes
2. Stir in taco seasoning and tomato sauce and cook until hot and chicken is cooked through.
